You dont cook with extra virgin olive oil. Makes zero practical sense in a kitchen

Can you even start to explain why?

Just because it's expensive for a commercial kitchen doesn't mean you shouldn't use it.. :wallbash:

Olive oil is ok for lower heat saute of vegetables or finishing but high heat destroys a lot of the flavor of the olive oil so it becomes a waste of money for certain dishes and is especially essential for a house salad as the body cannot absorb the nutrients from the salad without a fatty base. Easier to just use avocado oil for high heat and butter for low heat.

Cooking with extra virgin olive oil is a waste though and really best as a dressing. Nick keepin it simple
