In the flat earth you would be looking in entirely opposite directions if you looked "south" from Australia, as if you looked "south" from South America.
What you described does, however, work perfectly with a round Earth.
Oh sorry, maybe I should specify. If you look SOUTH both times, you see the same constelations. If you look North both times you see different constellations because the Earth is obscuring your vision, because the Earth is round.
