those power poles are on the ground and CLOSE to you, so they will appear to get smaller the further away they are (convergence working) , the sun is 3000 miles away (FAR from you) and perspective makes it stay that way.
You know the sun is huge (32 miles in diameter) in reality, but perspective converged it into the smaller shape because the sky plane is much larger than the ground plane (which you are close too)
you know in reality that the 7th pole that just vanished (in the horizon) is roughly 3 miles away, but the sun is 3000 miles away.....so u walk ahead 3 miles and that 7th pole is now large in front of you, but the sun is still 3000 miles away (so it's still small due to how perspective works)

the sun isn't setting over the horizon. the sun is still in the sky and just reached the vanishing point (converged). It reached the limit of human vision until the sun is no longer visible, and then shortly after, the light radius from the sun is no longer visible to the human eye and we see night time
Ie it has moved further away
If the sun moves out of or range of vision it can not maintain the same distance and will obviously then appear smaller the further it get from you

Effectively you saying the sun is the same distance to points A, B and C but has reached the limit of human vision until the sun is no longer visible
....Okaay
