as the sun traverses away from your position, the laws of perspective and convergence will show it getting lower (visually, not literally) and eventually it reaches the vanishing point which is what u call the horizon.

Except, the sun stays the same size as it "Disappears" into the vanishing point. Nerd, if it was retreating further and further away, it would get smaller.
If we were on a flat earth, with the sun spinning around us, we would never lose sight of it. It would always be above us.
