The vanishing point is not the limit of sight - its just an imaginary point in drawing to help you maintain perspective. IRL the horizon line is the limit of your sight for the plane your eyes are on, of course you can see past the horizon line , but you need to take into account how the perspective matrix works.
The earth is not curving up to the horizon , is just optical appears that way because it is were the flat land becomes level with your eye, and after that point the land appears to drop and you only see whats above that point. Ball earth is a basic and classic misunderstanding of the perspective matrix.
Its not taught to you for a reason.
