Overall observation: it is almost as though evaporation over large bodies of water creates a magnified effect in the atmosphere...

We are talking about an object moving out of our range of sight
As the plane ascends higher and further away it gets smaller

A plain higher up will be even further away

Since this is your theory lets see your vid of a plane flighing over head away while maintaining the same visual size

This is basic perspective, an object close to you does not have the same size perspective as an object far away from you. Here's an experiment for you to do.
Lay down on the ground - take a golf ball 1 inch away from you have your mom raise it to 6 feet and compare it to that same golf ball already 6 feet away as it it moves parallel to you.
If you dont notice the size difference between the two - you might be learning impaired.

As for how the layers of the atmosphere can act like a magnifying glass - consider the moon - sometimes it's really big - ever wonder why that is?
Does the moon actually come closer to earth?
