agility is better than osrs, especially once you get over 70.
thieving is one of those skills that has options between high intensity/high xp to afk/moderate xp. you can pretty easily netflix and skill it to 99 right from the start, and a lot of irons do that to unlock player owned ports right away. I personally prefer getting 92 rcing at runespan first thing on an iron, because the ports rewards from runecrafting are significantly better than thieving, and double natures are really valuable to have from an early point.
one thing i really like about RS3 ironman is that there's a lot of overlap between skills. you can map out your progress in one skill in a way that benefits another. you'll continuously find yourself getting a level in X skill so that you can do something else in Y skill so that you can use its products in Z skill which will make skill A more efficient.
for example, the best way to get 99 fletching is to do rune darts or arrows from 75-99. with the new mining and smithing xp rates, overall rates for mining don't change much based on what you're mining, so you can mine runite and luminite until you have 9k rune bars. smelting and smithing those bars will get you from 50-84 smithing, kinda vaulting you up to higher tier smithing. you can then make rune arrows or rune darts. darts are a lot faster as their make X function is quicker and they need fewer feathers as well as not needing arrow shafts to be fletched. the choice comes down to whether you want invention components or GP. arrows give more GP which can then be used for other skills like summoning which require GP input, whereas darts give arguably better components.
or the crossover from mining to archaeology. you mine gem rocks for crafting xp which you then turn into necklaces for more xp, and combine them with energy harvested from divination to make porters which make gathering skills, particularly archaeology, a lot more tolerable because you don't need to bank as often.
