If you're into high fantasy and epic fantasy, you should read The Hobbit (lightweight), then the Lord of the Rings (moderate, depends on the reader) and after those two try The Silmarillion (heavy) and then the Children of Hurin (moderate, depends on the reader). The Hobbit and LoTR are one pretty much, but the other two are not. They are _all_ part of JRR Tolkien's epic fantasy legendarium Arda and are all connected in one way or another. I warn you though, the legendarium is _vast_, there's nothing like it in any way.

By the way, Christopher Paolini's book series is called The Inheritance Cycle. Eragon is the first book of the series.

Songs of Fire and Ice is another great one.

I used to read novels by R.A. Salvatore. I'm not sure if they are great are not but he is the only author I have ever enjoyed reading.

Enjoyed the first books of Drizzt very much but never finished the series though.
When the stories about the Underdark were over all the books were pretty boring, with the exception of the books with Artemis Entreri.
