Ok I am thinking of reading the Discworld series in the near future but I am curious in what order should I read them....

Should I go by chronological order of publication dates or for instance read all of the Rincewind novels, then the Death novels, and etc (not in any specific order just one "series" at a time)

There are a couple of miniseries within discworld novels that are somewhat depended on the order. But any of the books can be picked up and enjoyed.

My favourite are the watch novels or the industrial revolution novels

Indeed that was in fact the page that led me to question reading the books out of order publication date wise.

No matter what order you want, you should always started with The Colour of Magic and then The Light Fantastic. Great introductions to the Discworld universe. Also, reading them in date order can be more rewarding as you can see the whole disc (in particular Ankh-Morpork) evolve over the period of the 30ish books.

Actually, whilst still massively enjoyable books it's obvious that Pratchett's writing became much better as of Mort in my opinion. Definitely read the two mentioned above, but only start reading those when you're starting to read Rincewind's story, they can be a tad confusing as a start.
Apart from that you're absolutely wright. The amount of laughs you'll get if you read them in order is immensly great if you read them in order.

One last thing you might want to do is check up on what the particular book references to. Masquerade is infinitly more enjoyable of you've read or seen the phantom of the opera, and it of course helps if you know the story of Faust before you read Eric.

Now get to reading!
