I can't really rec Wheel of Time. Unless you like 3 paragraphs about every stitch in someone clothing every time they enter a room, and useless descriptions several times a chapter about how Aes Sedai adjust their shawls.

If that shit was left out the book could have been ended after 7-8 instead of a proposed 14-15.

Sanderson seems to be going in the right direction, but the damage is done.

It's all about details mate, some love it, some want more speedy stories.
I myself love the TWoT series, and though Brandon Sandersson ruined it some by speeding it up so much, but as I said, it's all personal opinions.

On topic

The Drenai Series by David Gemmell, all of free standing, but I guess there's a kind of 'history' order.
The Rigante Series by David Gemmell, epic fantasy 4 books total.
The Painted man/The Warded man by Peter V. Brett. highly recommended.
The Deed of Paksenarrion Novels by Elizabeth Moon
Anything by David Eddings
The Riftwar Cycle by Raymond E. Feist
