NO, please, do NOT read the sword of truth series. The first two books were fine, then you're reading the same thing over and over.
A good fantasy read is the "A Song of Ice and Fire" series. I'd rate it in my top.
Another interesting read are "The Black Company" books, yet still, the author managed to annoy me by the 5th book or so.
Eragon books are way generic, it's a good try, but just that.
Wheel of Time I haven't gotten around to, but 14 books? Really? And better than the books that made it all possible - LoTR?
Xanith is an interesting look on things, gets boring by the third or so book.
