FX lens can autofocus on DX bodies so long as the lens has a built-in focus motor (AF-S I think it is?).
Hold off on the D600 upgrade... wait for the next thing. It has dust issues which I bet you won't enjoy very much. If you upgrade to the D600, you'd probably be best off spending an equal amount of money on glass, or the upgrade would be lack-luster as well (like a 24-70 f2.8 zoom, or equivalent primes).
As far as your best option goes, I'm not quite certain. It sounds like you have expensive tastes, and you have high expectations, so my opinion would be to not settle for less in order to fill the focal range. Depending on how much you intend to spend (I mean, you plan on getting a D600), consider starting out collecting the "holy trinity" of zooms (though getting the 14-24mm widest zoom first would be kind-of odd)... but the resale value will be good (if you count that as being part of the bank). If you foresee yourself wanting to do interesting wide-angle shots of animals close up, food, people at a table, people on a boat, interesting structures, etc... you might want a fast zoom (the 14-24)... but if it's just for landscapes, then I'm not sure (there's options out there and I know about the same amount as you hahaha).
