Would it be better to shoot in black/white
or shoot normally then edit in photoshop later?

shoot in colour and process in B&W
1 - you always have the option of keeping colour
2 - in PS you have more control

i never see a reason to shoot in b&w unless its film.
i always think b&w digital is a cop out.

do dslrs even have a b&w function? i thought all that would do is take a color picture and use the in-camera filter to make it a b&w jpeg...

Canon allows you to shoot in black / white keeping all the color information in the RAW file, which means you can view the black / white shots on the camera, and still go back to color in your RAW conversion.
