The trick for me is asking myself what the subject is, in your first one, is it the key? Then your dof should be wide enough to cover it, I just go by trial and error to find the right one but my guess would be ~16

In the last one, you should choose between front focus on one of the pieces or a long dof, trial and error there too I guess
