Gear redundancy is too important to not have. I had to use the 100-400 for a wedding when the 70-200 II fucked up.
Another thing that you'll benefit from having a 50mm and an 85 mm is that each lens as a different bokeh quality and feel. If you wish to produce superior work, you must consider this as well.
100-400 seems really slow unless you're in a really bright church mang. Even then you'll need to jack up the ISO

By the way, considering the fact I`d most likely be using a 70-200mm for people and portraits, wouldnt getting the f2.8 L USM ( non IS ) Mk II be better than getting the f4 L IS USM ?! I guess I wont really need the IS for people and portraits, as I could easily be using shutter speeds of around 160 with the f2.8 lens. And they are about the same price.
I'm not sure i'm reading this right.. But there is no Mark II Non-IS
Order from sharpest to least sharp (70-200s)
70-200 f/2.8L IS Mark II USM
70-200 f/4L IS USM (extremely close to the mark II in sharpness)
70-200 f/4L
70-200 f/2.8L Non-IS
70-200 f/2.8L IS USM
But IMO IS helps ALOT regardless
