If your iso is on manual you can just set it low to avoid grain and compensate with aperture of shutter speed, but those have their drawbacks too.
For your long exposure night shots I would try keeping the ISO as low as possible and just adjusting the shutter speed. In a static scene like that a longer time isnt going to hurt so lowering the iso will improve the quality without much of a down side (although you may notice star trails with the longer speed)
