I fully understand your point.

I will be getting way more lenses, but starting off I am content with crap lenses, just to get use to shooting and the settings and what not.

if you went for nikon it wouldnt be a waste to start out with like a d3100.. its smaller and more compact.. and would be ideal for traveling or just to carry around... buying a more expensive body later on wouldnt be a waste then..

tbh if you are completely new to this and u just get a 17-55kit or something, I think u'll get disappointed ..

I have done photography before and this would be my third camera I've owned.

I am just trying to learn more about this stuff and not just pointing and shooting.

were just pointing out, since you wanna learn, that you DONT NEED to spend 2000$ for a decent camera.

D3200 / D 5200 / D7000 (this is a big body) / 650D / 60D (this is a big body) - They are all very! good cameras. And if you dont like the kit lens (which SUCKS!) get a Tamron 17-50 2.8 DC which OWNS!.
And you`re totally in with only 1000$.

Everything is upgradeable. But not really "downgradeable" >without losing< money. If you realise that you dont pick up your camera very often you will be glad not having spend 2000$... also you will be glad if you hate the 17-50mm zoom range... since you can easily add a 70-200 4.0 or anything else...

a dslr is so totally different to any point and shoot or analoge slr.. there worlds appart and you will be happy even with a small body for everything you intend to do...

ps: i know since i lost quite some money changing lenses and stuff..
I owned from Canon:
30D + 17-50 2.8 Tamron / 12-24 Sigma / 100mm 2.0 / 24-70 2.8 / 50mm 1.8 / but i ended up owning only the 24-70 since it was all i needed.

When i switched to nikon and already knew what i liked i ended up with a:
D700 + 16-35 4.0 VR + 50mm 1.4 + 70-200 2.8 VR II
And now a d800E + 14-24 2.8 + 50 1.4 + 85 1.8

Right now I am torn between 60D or 7D
But I love the lenses you pointed out, they are both very nice and pretty decently priced

i would say, if you have the money and plan to own the camera for at least 2 years... get a 7D.
Else get a 60D, which is newer than the 7D and besides the autofocus as good as it. Both cameras are really good.

Also, you can always check resellerratings.com if you shop outside of the "zone" of trusted well known sources.

95% of my purchases are Adorama, the rest B/H unless I am hitting up somewhere local for paper or different things I can't wait for.
