Yes there are 3 types of focus methods on most dslrs. The first being One-Shot meaning the camera will only focus on the subject once after you have depressed the shutter button halfway. The second is AI focus which does the same as One-Shot but if you hold the shutter-button half way and it finds that the focus needs to be adjusted it will do so. The final mode is AI servo focus - this mode is if you are tracking a moving targed and they must be kept in focus all the time, the camera will focus for you and keep doing so as long as the shutter-button is being depresses half-way. For example if you were wanting to take a picture of your friend standing still, you would use one-shot. But if you wanted to take a picture of your child running towards you to capture all the different expressions on their face you would use AI servo along with the continuous shooting mode.
Manual focus for moving targets is really hard, even though the lens ive got isnt that fast at focusing im so grateful i had this feature

Nice you should try getting a picture of an eagle because im sure you can manage, you've got a USM lens as well!!
I mean the 200mm f2.8L PRIME - the zoom is too expensive and if you look at the number of shots people have taken with the 70-200 the majority of them is at 150-200mm. Im looking at some reviews and it looks like an amazing lens - its black as well
