It simply all depends on the degree you have, at least in countries like Belgium and the Netherlands. For instance, in computer science, there are about 11,000 vacant jobs in Belgium alone, so if you have that degree you can literally have a job in one week of searching. But there's a lot of fields -- and sadly I'm fairly sure political science is one of those -- that are way, way lower on demand.
Nonetheless, I think political science is an area where your nationality could be an advantage, since it's an area where international relationships can be particularly important. But that's just my hunch.
