My suggestion is simple. Under settings add a option to allow users to select their preferred default amount of time that they want the topic to be tracked for each time.

So currently when you go to track a topic, the system is set by default to track it for 1 Week as seen below. However you can also click the drop down button and change this to a longer or shorter time of your preference but to my knowledge this must currently be done each time a topic is tracked.



Example:
I personally would have mine set for 2 Weeks by default or perhaps even 1 Month in some forums so that i don't have to change it manually each time I track a new topic. This way when i now click the track topic button it will by default be preset to 2 Weeks / 1 Month depending on what i choose under my account settings.

Not a massively impactful suggestion I know but I also assume its a fairly simple thing to add here so maybe if enough people feel it would be useful to them we could see it added at some point if its not an inconvenience. I could see this being especially nice for members who often track multiple topics per day.

Edit- someone just informed me that you can track an entire forum now. I have no idea when that was added but it kind of lessens the need for this suggestion. I'll let it ride until closed but not going to bump this any further. Sorry for not realizing you could track an entire forum. Thags a very welcome addition itself!
