There have been times where it's taken many hours to finally get a response from a mediator and I'm already asleep or the other person is asleep. I think being allowed to cancel these requests (if possible with the system they use) would be very helpful so they don't waste time going through requests that aren't needed anymore.

This feature already exists. Click the Request Mediator link on your topic and it will present you with that option if available.
