what is albumin and why does it not release carbon dioxide during yeast respiration?

those are two unrelated things

albumin is an abundent protein made by liver and it circulates in vascular and interstitial compartments. It's necessary to keep the oncotic pressure high so you don't get swelling, also for binding of certain molecules.

yeast doesn't produce co2 because it uses anaerobic respiration, produces lactate instead, which is then converted into EtOH

ok i had to do a lab
i mixed sucrose and glucose with yeast and they made lots of gas bubbles
but albumin made none
is it because albumin is not a sugar?

oh then ingore my last answer cause it's wrong in this context. yeast normally will produce co2 aerobically as long as you let it have oxygen, and you're right, because albumin is not a sugar.
