I have been assigned to watch the sunset about twice a week, note it based on
.....S
E........W
.....N
The time frame is essentially October 20th - December 3rd
I am supposed to note the number of degrees above the horizon at about the same time each night (A few minutes prior to sunset) to watch how the sun moves over time.
However, I have been finding it difficult to watch the sunset seeing as how I have classes that interfere with this, 5-6:30pm

I imagine this could be solved with some math and perhaps a somewhat intermediate knowledge of the sun cycle. I basically need to know the variation per day in the degrees that the sun is over the horizon.

If you feel you can do this, please PM me and I will include what I consider to be necessary knowledge, and you can also inquire further questions.
Necessary knowledge:

Location
My understanding of what the sun is expected to do
My very first and only recording of a sunset
Any other information you might find helpful.

You would be able to do this easily if you have access to astronomy software. When I took astronomy I had access to software that showed sun/star positions for any given date/time/location.

Not at college anymore or I would have access to it and do it for 500fg, heh. :x

This program is highly recommended, however when I use it for the sunsets, the sun does not appear to actually change where it sets at all....
