C12H22O11 + H20 - - > C6H12O6 + C6H12O6

(Sucrose + Water - - > glucose + fructose)

What type of reaction is occurring here?

The 5 types of reactions are
Synthesis
Decomposition
Replacement
Double Replacement
Combustion

I Am kinda confused on this one

Yo! Actually that reaction is catalyzed by an enzyme called invertase. That's an hydrolytic reaction.

The choices you enumerate are .. well .. limited.

Synthesis: No. There is no generation of a different molecule. Here there is one large molecule broken down in almost halves.
Decomposition: "A compound is broken down into smaller chemical species."
Replacement: A single replacement looks like A + BC → AC + B . Not the case here.
Double Replacement: Ionic species exchange their ions. { A+ B- } + { C+ D- } → {A+ D-} + {C+ B-}
Combustion: "Combustion usually occurs when a hydrocarbon reacts with oxygen to produce carbon dioxide and water." Not the case here.

The better choice here (and that's not a great choice) is: Decomposition. Because the disaccharide sucrose is broken down to two individual, smaller monosaccharides. Usually water doesn't count.
