Is the only difference their size and EVs? Can't a regular pokemon using grit have the same EVs as an alpha pokemon?

What makes alpha pokemon so special?

Those can be adjusted the same with grit gravel etc though right? So alpha pokemon just save you on some grit?

lets say a level 100 cyndaquil has 10 attack, the alpha version would have something like 13 - 23 attack in comparison if we assume both have no grits (ev levels) on both mons

not exactly the right numbers but the principle is the same

thats the point though so alpha pokemon just get a boost in evs that could otherwise just be boosted on normal pokemon with grit?

and post-game there's so much grit you can just farm i don't see an incentive to alpha hunt since their evs are always only under 3 which can be maximized with the most minimal amount of grit to begin with

edit: i double checked and apparently the difference is just that alpha starts with 3 ev stats at level 3 and a different movepool alongside the larger size but ultimately they share the same stats across the board!
