How can I leave my pokemon at a gym to get pokecoins?

I am in team red... and there is a red gym in my area. I went there and had only the option to fight the 3 people that were already in the gym
after I won vs all 3 nothing happened... I just got exp and the reputation of the gym was raised....

when I fought in a blue gym I won vs the enemy in there too and had no option to leave any of my pokemon in the gym...

what am I supposed to do?

Look at the prestige number in the top left corner. You have to "train" (fight) the gym until you fill it, that levels the gym from 3 to 4 and then you can add your pokes.

And for enemy gyms you need to fight them until the number reaches 0, then it turns neutral.

Once you beat a gym it's neutral then you can click on the gym again and leave a Pokemon there to take it over.

this means if a gym of my team is already full I have to level up the gym first to leave a pokemon in the gym?
is there a maximum level of gyms?

Yup. Not sure if there is a max level, so far highest I've seen is 7.

There a level 8 gym in my town, has 4x 100cp poke in it, then 2x 2k snorlax and 2x 2k gyrados, and now my 800 scyther just cuz

It's easy af to level a gym that has few low poke in it just to beat 4 then run over and over
