5/6 IV refers to the pokemon's stat potential. IV stands for "Initial Value". It's a hidden value that ranges from 0-31. 6 IV means the pokemon has an IV spread of 31-31-31-31-31-31 I.E. maximum potential stats for that pokemon.
Shiny of course refers to the ultra-rare version of the pokemon that has different colors. I.E. shiny Charizard is black rather than orange, shiny Magmar is pink rather than red, so on and so forth.
So basically, a shiny 5/6 IV pokemon is a shiny pokemon with perfect or ideal stats! Let me know if you have any other questions :D.
