but dont all the stats and attacks roll when trading?

Attacks stay the same, iv will change and cp will vary based on iv but will not change by much.

Mewtwo still available he decided against the trade.

IV gets randomized after trade including attack, defense, and HP. If someone trades you their 98% IV Mewtwo, you'll get anywhere from 0% (0 att/0 def/0 HP) to 100% (15 att/15 def/15 HP) IV. You can only check the stats once you completed the trade and the Pokemon becomes bound to your account. This means you cannot trade it back.
