I just got my photoshop, and whenever I press ctrl + z, it only goes back 1 step, I remember on my old one, I could undo up to 5 or so. Any idea?

Yes, hold Alt+ Ctrl and press Z when you want to get back more than one time ^_^

The problem is, that's what I'm doing. Alt + Ctrl Z still only goes back once, then undos.

If you go to photoshop preferences, there should be an option somewhere, under performance I think, to increase the amount of undos it stores... The default is 25 or so, and the more you increase the more ram photoshop uses!

good to know, gonna set my storaged steps to ~ 60ish
