How i Extract a color from an object in my background. so i can use it on the word text?

make text layer and write what do you want
then create layer who is upper your text layer
then go image
apply image
then press on aplied image layer with right mouse button and click create clipping mask. then take move tool and move this layer until you got your needed color

Yes! Except make sure if your sig is in layer's your on the right layer, and I believe it is alt+click
