I need help figureing out how i can edit my previous work. Because i cannot change text after i have closed the window that i wrote it with.

It merges into one layer, Why does it not stay as 2, 3, or 4 ect?

You have to save as a .xcf file. This will save it in gimp format. Anything else will merge into one layer

Note: To save for future editing save as .xcf, to upload and post, save as .png
