Its called a clipping mask

I don't know how to do it in Photoshop, but if your using gimp I can help you out

Ok

Before you make the text layer, Copy Visible (Right click icon_pointr.gif Edit icon_pointr.gif Copy Visible)
Make your text layer
On the text layer hit "Alpha to Section" (Section might be selection but w/e)
Then hit Paste Into (Right Click icon_pointr.gif Edit icon_pointr.gif Paste Into)
