That really depends upon the bird tho... grouse will wait for a car to go by before they run out onto a dirt road(they eat small rocks to help with their digestion or something) but after the first car goes by they assume that's the only one and will often get hit by the one behind it.
They also often just stand still if you shoot at them and miss
All birds have strong chests from pumping their wings all the time tho. Most birds have like 50%+ of their mass in their chest...

but yeah some probably aren't as acute as others.
crows are super smart.. will have to read more about them but they do shit for entertainment apparently; picking stuff up and rolling it down roof tops, teasing other animals, etc.
