do people actually use the callouts that they give you? or are they making new shorter ones?

and does anyone know all the callouts yet?

No one 'makes' 'em.

Some people use the ones they give you, but a lot of callouts are simple - based on what is near you.

Also, having been H2 Maps - there are already callouts for a few of the maps.
