I think I liked Kefka (FFVI) the most, although Zeromus (FFIV) was probably the hardest

FFIII was probably the hardest to beat, while FFX was probably the hardest and most time consuming to complete due to the many and siedquests.

FFX (assuming we leave out the sidequests), FFVIII was probably the easiest to complete
