me and buddy starting over again on FFXI and wanting to know best server to choose looking for good population and good economy

I won't pick my own server because it has an awful reputation as far as population goes. I hear nothing but good things about Ragnarok, Bahamut, Odin(which you don't have listed), and Asura(which you don't have listed).

would only let me pick 10 i didn't knwo what ones to pick what server you play on?

I play on Fenrir. Supposed to have one of the worst populations(attitude wise). As far as total # of players goes, pretty much every server is close in that regards. As for a good economy I think Ragnarok and Bahamut are known for that.
