What does all parameters like STR or MAG exactly mean?

You mean like strength, magic, agility, etc...?

STR: Strenght - More str = More damage.
ATK: Attack. - Same as either str or acc.
DEF: Defence. - More def = Less physical damage taken.
MAG: Magic. - More mag = More magic damage.
MAG DEF: Magic defence. - More mag def = Less magical damage taken.
AGI: Agility. - More agi = Less time until your next turn.
EVA: Evade. - More eva = Higher rate to avoid physical damage.
SPD: Speed. - Same as agi.
ACC: Accuracy.- More acc = Higher rate to hit a enemy.
LUCK: Luck. - Unsure about this but, more luck = same as eva & acc.
VIT: Vitality. - Same as def. (I think).
SPR: Spirit. - Same as mag def. (I think).

Only HP and VIT is actually relevent once you get Costly punch materia anyways.

vit= more hp spirit = more mp.. for most games anyways
