Overall, I would say Recover. I used that materia all the time to cure my party.
A contender would be enemy skill. Some boss battles I could not image not having Big Guard/Agualung/Magic Breath.

Kotr ofc.

Regen was also pretty nice. I liked how you could cast regen, then open your PSX lid and the game would stall, healing you fully, then you close it and it continues :P
