All of these dream teams must be jokes.
Allow me.
Assuming we're going by the "new" thing, letting only three battle at a time, I'd have my main party set up like this:
Kain (IV) - High strength, dexterity, his "Jump" ability, etc. Great character, even though he was used by the antagonists for a fraction of the game (FF4).
Yuna (X) - High magic power, defense against magic, decent evasion, etc. Learns "Life" early on, and can summon. A decent character, but I despised her emo attitude in FF10. She redeemed herself in FF10 2, though.
Galuf (V) - All-around good character, in both fighting ability and casting ability. I'd use him as a Black Mage. He's got a funny personality. It was a shame that he died halfway through FF5.
I have to choose based on both their fighting capabilities and their personalities. You wouldn't want to play with boring characters all the way through the game, would you? (I know I have Yuna in there, but still...)
For backup, I'd have:
Yang (IV) - High strength, dexterity, his "Kick" ability, etc. A decent character, but his excellent HP and strength stats make him a formidable opponent.
Auron (X) - Same as Yang, except without Kick, but Auron has stat-breakers, which help a lot, even during certain boss battles. Probably my favorite character from the series.
Rikku (X) - High agility, her "Steal" and "Use" abilities, etc. Another one of my favorites. Her strength may be lacking, but the items you can steal and use (and mix) make up for it. (Dark Matter, Trio of 9999, etc.)
Rydia (IV) - High magic power, defense against magic, can summon, use Black Magic, etc. She loses her ability to use White Magic after becoming an adult, but her other skills are boosted, and become most useful.
Sorry, no pretty boys that don't know how to grow facial hair in my entourage. (Cloud, Tidus, Sephiroth, etc.)
