FFVIII is only as easy as you want it to be to be honest. If you play through it normally, without going out of your way to avoid levelling and/or improve your junctions, then it can be fairly challenging. If you do those two things I listed, then it can become much easier.
Most FF games are like that, actually. Certain things can be done to make them easier than normal. You can't really complain that FFVIII is too easy if you go out of your way to get invincibility items and get the best junctions, just like you can't complain that FFVI is too easy if you use Vanish/Doom, just like you can't complain that FFXII is too easy if you farm the best equipment, just like you can't complain that FFIX is too easy if you abuse Quina's Limit Glove, and so on.
I actually like how FFVIII gives you a lot of different options which can drastically affect the difficulty of the game. Every time I play through it, I do things differently, and I have played through it a *lot*, probably more than any other FF game.
I do like challenging games myself (like Ikaruga :P), and I still manage to get a lot of enjoyment out of FFVIII.
