I'm confused by this type of deck. What is its purpose and what does the 'zoo' part actually stand for?

zoo stands for lots of minions as said.

It comes from MtG, where there are zoo decks (so, minions based) sucessful in tournament in some format

In mtg the minions with high stats for their mana cost were usually animal themed
A typical example was Savannah Lions which was featured in pretty much every core set end thus made it into every zoo deck in standard
Since the deck had allot of animals and the core idea was board flood+control the game with small and powerfull early drops it got the name zoo.
If the deck is mono white and the playstyle is similar to zoo its called white weenie.

In hearthstone the name is not as fitting as it is in mtg because warlock plays no animals/beasts (aside from dire wolf alpha) but allot of demons
but reynard doesn't care because the community is full of s**t anyways and the name has a good sound to it and thats why we call the deck zoo
