that intro is sweet, tons of possibilities.
I did few quick searches for rpg maker MX, rpg maker Newst, and the such with no results. If you are able to get a link to a news page i would love to read it.
As a DM I used "the casket of neverending winters" to start a winter till we could find a way to shut it, all the chars knew is that the only one who can open/close it is "Kerivakz" the god of winter. He opened it during the battle where the god of frost giants laid siege to a city. all 101 frost giants, as well as there minions were slain. The god's avatars were dead, preventing there appearance on the prime material for 1 year. It was a cold year
What kind of world would it be? like earthish? Have you given thought to the astrology of the world?

Typical fantasy - say secret of mana, open world, but with excessive snow areas in the overworld.
You'd gain access to the underworld - a mirror world where the demons dwell, some enslaved human camps could be found in the world where you'd get the chance to rest/sleep/purchase equipment.

The next entry in the popular RPG Maker series for PC and Mac is RPG Maker MV, the latest issue of Weekly Famitsu reveals.

The latest iteration of the tool promises to be a major evolution. Key points outlined in the magazine include:

Multi-device support.
Side-view battles added.
Support for both touch controls and mouse controls.
Big increase on the limit of database items.
Maps are automatically three-layered.
Games run in high resolution.

A release date is not announced.

wow these "games" get better every time, thanks... no release date but I'm still pumped!
I would be like the idea of capturing your save points, probably just the first time.
The underworld is great, i use a underdark from D&D source material, has such races as Drow(elvs just white hair gray/black skin) Deurgard (dwarf just like drow)
The underdark has great potentail but i get my players feel like its one cave after another, how many underground rivers/lakes can the party really find. On the other side of the coin, the underdark blends well to cities(particularly thief cities)

I quite prefer the GURPS style over D&D,. though that's mostly coz they had a ravanloft version of one of the books.

I have played GURPS and enjoyed it, I still go back to D&D because simply put I know more people who play that in my area. I also know the material better.
ravenloft is tons of fun, if you enjoy the ravenloft world you should try the board game. Its easy to pick up with 2 or more friends (you will want atleast 3 players) VERY simplified rules that look kinda like 3.5ed-4ed ish?

And then there is hero quest.

some may find it a bit simple - but at a board game, with some peanuts and friends it's gold.

Another point I would like to bring up is the mighty force "Undead."
Thanks to a post, a HelHeim aspect was brought up
I would like to get peoples input on the creatures them selves. Normally we think of skeletons, zombies, and perhaps the ghost. There are TONS more that don't fall in those lines (but work on the same principle.) My favorite has to be the Lich.
D&D wiki says-
"A lich is an undead spellcaster, usually a wizard or sorcerer but sometimes a cleric or other spellcaster, who has used its magical powers to unnaturally extend its life.

A lich is a gaunt and skeletal humanoid with withered flesh stretched tight across horribly visible bones. Its eyes have long ago been lost to decay, but bright pinpoints of crimson light burn on in the empty sockets.

Liches speak Common plus any other languages they knew in life. "
But more the role they play as the 'bad guy' is limitless. They are the "brains" behind the chaos. Using there influence and power to control the hordes of creatures.Right now I'm working on a dungeon with a lich at the end who is secretly working for a vampire (which is unknown to the lich him self). This draws me into a problem. Should i use Vampire and spawn in there as spys or pawns of some sort or would the lich basically foil the plain from the start?
There are other creatures i could use such as death knights, but they seldom work with other people then their minions. Then there are 3 standers with variance. the variance could include a hybrid style creature such as a vampire beholder. Don't forget the undead dragons or even draco liches (these would be out of place in this story arch)

TLDR;
What do you like to see in undead dungeons?

i would highlight void magic as a good source for the undead type magic - as seen in: https://en.wikipedia.org/wiki/Sovereign_Stone
