It's been a while since I've played and I purchased HoTS a few months ago and I can't figure out how to get the upgraded lings in multiplayer.
Is there a place where I can see unlocks in multiplayer for each race?

The mission evolutions are not in the multiplayer mode. So if your talking about the bouncing lings that can hop over cliffs like reapers NOT GONNA HAPPEN.

Go to rewards -> skins

I'm pretty sure.
There's a bunch of different stuffs there.

If not, then I have no clue what he's talking about.

you unlock unit skins and decals and stuff by leveling each race

at some point you unlock a skin for zerglings that gives them one of the skins from the campaign

surely he doesnt actually think you can do things like make your banelings duplicate or tunnel swarm hosts across the map in a second

Upgraded Longs

In multiplayer I've seen lings with the wings n whatnot. I am just curious as to how to get this.

Those are speedlings. Just get the metabolic boost from your spawning pool.
