And while Zerg can do that, Protoss can easily go VR/Colossi/zealot, which stomps anything not named mass muta, and if you see mass muta you add phoenix and rape the Zerg. The thing is that Zerg is limited by the high gas cost of its units in terms of tech switching--hydra switches are relatively easy to deal with, as most mid-game armies can kill hydras effectively. The muta transition can be problematic, but if you kill the mutas Zerg loses so much gas that it will be a long time before they can build up a high tier army, giving you ample time to press your advantage against a remax that will be hydra-based.
Anticipate switches, prepare for mutas and scout well. Zerg's flexibility and mobility are some of their few strengths.
