Hard decision.
protoss game mechanics are the easiest, though they have to micro their stuff well.
zerg has to manage their creep spread and injects and total map control is required to stay in the game, but their micro is non-existent.

Protoss is the easiest race to play, the other two require some sort of good mechanics to do well.

Zerg.
You can afford to throw away 100+ army supply and remax within seconds with bare minimum costs aka 1a all day.
Protoss loses 100+ army supply you can remax equally fast if you have the economy therefore you gotta work on that micro + ffs.
Terran can afford to throw away 100+ army supply but will never die because MMM is op as shit enough heal to take on all

terran on beginner level.
after a bit of practice and gamesense its toss/terran.
platinum level and higher all races are about even. each of them has different flaws and weaknesses you have to deal with.

Protoss > Terran > Zerg

You don't need a lot of APM to marco in protoss and the race allows so many viable cheeses... it's the easiest when you begin imo. At highest level i won't discuss, because i'm obviously not a pro.
Then terran needs more APM, multi-tasking and micro, but allows you some macro mistakes due to mules. The better you become, the highest APM it will require to compete with other races.
Finally zerg is for me the hardest race to play, because you need to know when to make drones and when to make units. It's so easy to make too much units too soon and then fall behing economically, or to over-drone and then die to a simple timing attack. Also larva injects require a lot of focus.

zerg is mostly about how much do you practice this shit, terran (and sometimes protoss) multitasking and unit control takes skill, you can of course practice, but it requires some talent to have, not like the droning stuff, you just have to get used to it and it won't make anything harder.

the easiest to learn is obviously protoss, but then it just becomes equal, because after a certain level, every race becomes hard to play with
