Hunter's are pretty user friendly, and you can get a pet to tank for ya.

Paladin or Druid can use all different roles, aka tanks, healers and damage dealers

Ironically the first two classes I ever played back in Vanilla I thought I would enjoy the most actually turned into classes that I literally do not play anymore and have not played in several expansions.
