When I was forming a group for a dungeon.... both people that que'd and joined half of their gear was intellect, and the other half was strenght.... is that normal? for instance, 1 was a ret.... shouldn't it all be strenght? Or was it all a strenght but just shows as int? idk

at low levels people just wear whatever has higher stats than their previous gear. if you went from a 3 stamina belt to a 5 stam, 5 int and 5 spirit belt it's still an upgrade technically so a lot of people will equip it.

However at max level gear changes stats based on your spec, so intellect gear changes to agi if you're a spec that uses agility.

stats doesn't really matter until level 40'ish

doesn't a rogue kill everyone in a stun regardless of gear?

the answer is yes, if they do not 1hit you, they stun you and poke you to death.
