if i'm a dk would there be a difference in the rolls if i were to choose specialization as blood over say unholy for a weapon?

or is it random and doesn't matter for pieces that wouldn't get "blood" stats like bonus armor?

Rolling on what? Quest rewards? What exactly are you rolling for and its either tank or dps, there is no special spec loot....

doesnt make a difference...2h weapon is a 2h weapon...both specs only use 2 h weapons.
