my professions; tailoring and enchaning are 600/600 both

but i can't level them up anymore,

i heard i gotta get some scrolls or books by questing? Does anyone know where u have to quest for them? Obviously in draenor but does the zone matter?

Level for like 10 minutes and you'll get them

my character is 100...

I don't know what you did wrong. I got them on both of my characters extremely fast. Just off random mobs.

do you know if it's a scroll or book, for tailoring/enchanting? also what do i do once i get them?

and also, would dungeoning work to find them?

It's a scroll. I have engineering and enchanting and I got them in shadowmoon valley very quickly. Once you get them all you do is learn them and it lets you have 600/700 and you learn some basic shit. I was on my druid and learned leath/skin later and I found the skinning scroll in a dungeon, so yes.
