Okay so I have a 100 DK a 90 Druid and a 90 Priest.
Now im kinda stuck between insta 90 either a Shaman or a Warrior.

I like tanking and healing so I want which ever class isnt going to be boring. I was even thinking about going Arms warrior or Ele shaman instead of the usual tank/heals.
any advice appreciated

If you plan on playing it right now, this current patch favors melee DPS, so I would go with arms/fury warrior (I forget which is best). I also think warriors are really cool in general, plus they made heroic leap awesome.

Don't boost shammy unless u really like it, like i do. Resto is currently only viable spec for shamans.
